The producer
Since its creation by Elisabeth Salmon and Nicolas-François Billecart in 1818, the Billecart-Salmon Champagne House has remained independently-owned and thus has preserved both its know-how and its high-quality vintages for 7 generations.
The vineyard
The Billecart-Salmon vineyard spreads across nearly 100 hectares, from the Côte des Blancs to the Montagne de Reims. The vines are cultivated and cared for in a traditional manner in order to reach an authentic fruity expression and reflect the quality of the Champagne terroir.
The wine
This 2013 Billecart-Salmon Vintage is made from 85% of Grands and Premiers Crus from the emblematic terroirs of the Montagne de Reims, the Côte des Blancs and the Marne Valley. Its dosage is 3g/litre.
Vinification and ageing
Following vinification in vats, this cuvée is aged on its lees for 89 months.

The tasting
Colour
The colour is a beautiful pale gold with bright yellow highlights.
Nose
Intense, the nose harmoniously blends fruity fragrances with notes of fresh hazelnut and pomelo flesh. When aerated, this champagne reveals pastry notes (raw butter, lemon cream) sustained by a suave freshness.
Palate
The palate is seduced by this champagne’s precision, its fruity expression and its creamy texture. Complex and refined, the palate stretches to a delicately structured finish.
Cellaring
This exceptional champagne can be cellared for 8 to 10 years in bottle format and over 10 years in magnum.
Food and wine pairing
A sea bream ceviche or a pan-fried foie gras will complement this refined vintage champagne.
Service
For an optimal tasting, serve at a temperature between 11 and 12°C.
