The estate
Established for nearly five centuries in Mareuil-sur-Aÿ, the Philipponnat Champagne House is one of the historic names in the Champagne region. Singularity, excellence, generosity and simplicity are the values that guide this house, which has remained a family-owned business. Owned by the house since 1935, the mythical Clos des Goisses is one of the oldest and most prestigious plots in the Champagne region. This utter gem is the source of rare and exceptionally powerful champagnes.
The Philipponnat Champagne House boasts an exceptional 20-hectare vineyard, situated in Premiers and Grands Crus in Aÿ, Mareuil-sur-Aÿ and Avenay.
The vintage
A relatively cool spring preceded a particularly dry summer with an exceptional amount of sunshine, which led to water stress. The rainy spells at the beginning of September were beneficial for the vineyard and the ripening process. Although the grapes were harvested at a higher than average ripeness level, the yields were moderate to low depending on the area.
Vinification and ageing
This champagne is vinified in a traditional manner, in vats and underwood, to avoid premature oxidation. Only the juice vinified in vats undergoes partial malolactic fermentation. This champagne is aged for five to seven years and the dosage is 4.25 g/litre.
The blend
Philipponnat's Blanc de Noirs 2015 is a 100% Pinot Noir. This champagne is made from vineyards in the Montagne de Reims, Mareuil-sur-Ay, Ay and Avenay-Val-d'Or. The first press exclusively comprises Premiers and Grands Crus.
The tasting
Colour
Brilliant, the colour is a beautiful rose gold. The effervescence is fine and persistent.
Nose
Gourmet, the nose blends fragrances of fresh pear, almond and cinnamon with flavoursome pastry notes.
Palate
The attack is round and generous. In the mouth, praline notes combine with aromas of caramel and apricot jam. Refreshing, the finish exudes spicy notes (cinnamon, clove).
Food and wine pairing
This Blanc de Noirs 2015 by Philipponnat will complement a chicken tagine with apricots and almonds, terrines or foie gras.
Service
For an optimal tasting experience, serve between 8 and 9°C as an aperitif and 10 to 12°C at the dinner table.
Cellaring
The Blanc de Noirs 2015 by Philipponnat can be kept in the cellar until at least 2026 in order to develop its aromatic complexity.
