An elegant and delicate Rosé champagne by Philipponnat

The producer

Established for nearly five centuries in Mareuil-sur-Aÿ, the Philipponnat Champagne House is one of the historic names in the Champagne region. Singularity, excellence, generosity and simplicity are the values that guide this house, which has remained a family-owned business. Owned by the house since 1935, the mythical Clos des Goisses is one of the oldest and most prestigious plots in the Champagne region. This utter gem is the source of rare and exceptionally powerful champagnes.

The Philipponnat Champagne house reigns over an exceptional 20-hectare vineyard composed of Premiers and Grands Crus in Aÿ, Mareuil-sur-Aÿ and Avenay.

The wine

The Cuvée Royale Réserve pays tribute to the Philipponnat family's ancestors: vineyard owners, winemakers, suppliers to Louis XIV, magistrates and royal mayors in Ay. This cuvée offers a beautiful balance between structure, length and vinosity on the palate.

This Champagne Rosé comprises red Champagne wine from the Riceys terroirs as well as from the historic vineyard of Mareuil-sur-Ay.

Vinification and ageing

This cuvée is vinified in a traditional manner, avoiding any premature oxidation, with malolactic fermentation and ageing in barrels to develop the complexity of the aromas. The red wine obtained by maceration completes the vinification (7 to 8%) in order to elaborate a fruity and subtly coloured rosé champagne. This Rosé Champagne is aged for three years and the dosage is 9 g/l.

The blend

The Cuvée Royale Réserve Rosé by Maison Philipponnat is made from Pinot Noir (75%), Chardonnay (20%) and Pinot Meunier (5%). The first press is composed predominantly of Grands and Premiers Crus. 25 to 30% of reserve wines vinified using the Solera method and aged in oak complete the blend.

The tasting

Colour

The colour is a beautiful salmon pink, with coppery highlights. The effervescence is fine, creamy and persistent.

Nose

The nose opens with fruity fragrances (red fruits, cherries, wild strawberries). When aerated, notes of citrus and grapefruit peel emerge.

Palate

An elegant and pure attack precedes a full mouth, whose beautiful acidity blends harmoniously with a subtle acidity that highlights the fruit.

Food and wine pairing

Enjoy as an apéritic, this Cuvée Royale Rosé by Philipponnat also complements fish, smoked meats (ham, bacon) or pink meats (veal, lamb) as well as red berry desserts, served on its own or as a soup.

Service

For an optimal tasting, serve at 9°C.

Cellaring

Although this champagne expresses its lively character when young, it can be kept in the cellar for several years to develop its aromatic complexity.
