The property
Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way to get closer to an authentic fruit and a reflection of the quality of its terroir. The Elisabeth Salmon 2008 cuvée is composed of 76% Grands crus and 24% Premiers crus from Champagne.
The wine
This Elisabeth Salmon cuvée is a true tribute to the co-founder of the House. The soul of this extraordinary woman is found in this champagne with a unique character and unparalleled brilliance and purity. Moreover, the expression of the best terroirs of pinot noir and chardonnay completes this great Rosé champagne shaped by a know-how recognized worldwide. Made from 76% grands crus and 24% premiers crus, the 2008 vintage of the Elisabeth Salmon cuvée marks a change in visual identity.
Vinification and aging
9% of the pinot noir of this 2008 vintage champagne is vinified in red from grapes from Valofroy, a plot of Mareuil-sur-Aÿ composed of old steep vines facing south. 17% of the wines are vinified at low temperature in 15-year-old oak barrels on average. The dosage is 7 g/l.
Blend
Pinot noir (55%) from the Montagne de Reims and the Grande Vallée de la Marne and chardonnay (45%) from the Côte des Blancs.

Tasting
Color
Elisabeth Salmon 2008 has a bright color with soft warm coppery reflections and an intense salmon pink hue.
Nose
The aromatic bouquet expresses the freshness of citrus peels mixed with a jelly of small red fruits. The aromatic amplitude, rich and complex, reveals very beautiful refined and mature notes of sweet spices and wild raspberry pulp. The inimitable character of the Pougastel strawberry harmonizes perfectly with the Mara des Bois and the vine peach.
Palate
This vintage embodies a champagne with power balanced by a tasty delicacy. The gourmet flavors of mandarin, blood orange, and reinette apple tart offer a full and structured palate. The cuvée culminates in its persistent finish marked by citron zest and red and white currants.
Food and wine pairings
Beautiful poultry as well as royal langoustines are refined pairings.
Service and aging
For optimal tasting, serve between 11 and 12 degrees. This champagne can wait in the cellar for about 10 years.
