Founded in 2008, the Cave des Amandiers embodies an ambitious and quite unique project in terms of creation: to rehabilitate an estate on a mountain vineyard entirely covered with vertiginous terraces, sometimes even abandoned. In order to fulfill this lifelong dream, Alexandre Delétraz managed to convince 65 owners to sell him nearly 200 different plots in order to unify the 6.5 hectares of sublime vines that today make up the Cave des Amandiers.
The vineyard of the Cave des Amandiers is located in Switzerland, in the heart of the steep canton of Valais. There, the vines cling strongly to the hillsides and many small terraces are supported by dry stone walls.
The soil is influenced by granite, which is a geological exception in the region. The aromatic magic of the grapes works largely thanks to a microclimate: the heat that emanates from the stone walls keeps the vineyard warm during the night and the high altitude allows optimal exposure. Far beyond mountain viticulture, the work of the estate could be described as "heroic viticulture" as it is surprising and unique in its kind.
From these sublime, but above all exceptional terroirs sprang the desire to create great wines that would accurately reveal the quality of the native grape varieties of Valais. From the vine to the cellar, the grape is king. The vines are cared for by skilled, experienced and passionate hands during the harvest and in the cellar the wine takes the time to evolve in freshness and calm. Thanks to this authentic environment, the wines of the Cave des Amandiers develop gently and take the time to develop each nuance of their aromatic expression with precision.
