An opulent and balanced Corton Grand Cru wine

The estate

Founded in 1825 by Pierre Faiveley in the village of Nuits, Joseph Faiveley is one of the finest references in the Côte de Nuits. Currently managed by Erwan & Eve Faiveley, the 7th generation of the family, Domaine Faiveley provides wine lovers with a superb range of wines that reflect the utterly diverse Burgundy terroirs.

The vineyard

Although Domaine Faiveley was historically established in the Côtes de Nuits at Nuits-Saint-Georges, the company has gradually extended its vineyards to the Côte de Beaune and Côte Chalonnaise. Today, Domaine Faiveley owns 12 Grands Crus and 25 Premiers Crus in Burgundy and reigns over an exceptional heritage of vines.

The wine

Recognised as one of only two Grands Crus in Burgundy bearing the name of its owner (along with Romanée-Conti), the "Clos des Cortons Faiveley" monopole of Domaine Faiveley, has belonged to the Faiveley family since 1874. This fine Corton wine is made from a parcel of 2.76 hectares. The vines are exposed to the east and lie on iron and marl soils.

Vinification and ageing

Manual harvesting and sorting. Vinification along with daily punching down of the cap to promote extraction. Vatting for 19 days. Separation of the free-run juice and the pomace, which is pressed to obtain a pure and delicate press wine. Aged for 18 months in French oak barrels (50% new and 50% second-fill barrels).

Foie gras mi-cuit with armagnac, game, quail, partridge or cheeses (Cîteaux, reblochon) are refined matches with this fine Burgundy wine.

Service

For an optimal tasting, serve at 16°C.

Cellaring

This wine can be kept in the cellar until about 2042 to reveal its full range of aromas.
