The estate
Established since 1825 in Nuits-Saint-Georges in the heart of the Côte de Nuits, the Faiveley family is at the head of one of the most beautiful and historic estates in Burgundy. By combining respect for tradition and modernity, Domaine Faiveley produces great Burgundy wines. The vines are grown using sustainable viticulture methods to preserve the diversity of flora and fauna. With a wide range of wines of great aptness and precision, Domaine Faiveley is an important name in Burgundy.
The vineyard
The Domaine Faiveley vineyard covers more than 120 hectares of vines spread over the Côte de Nuits, the Côte de Beaune and the Côte Chalonnaise. This exceptional viticultural heritage includes superb plots of Burgundy Grand and Premier Crus, embodying the quintessence of Chardonnay and Pinot Noir.
The wine
Latricières-Chambertin Grand Cru from Domaine Faiveley is a wine that stems from a vineyard named in « Petite Merveille » (Little Marvel) in the Middle Ages, thanks to the exceptional quality of its wines. This plot has a surface area of a little over a hectare.
Winemaking and ageing
Hand-picked, the grapes underwent a short pre-fermentation maceration before vinification, partly in wooden truncated-cone vats. After the vatting period of more than 3 weeks, the wines were pressed vertically in order to obtain pure and high quality juice. The wine was aged in oak barrels in 19th century vaulted cellars for 16 to 18 months (2/3 new barrels with fine grain and moderate heating).
