Tasting
Nose
The Dom Ruinart Rosé 2007 Champagne is a wine of character. On the nose, the warm and solar aromas of roasting, coffee and cocoa bean mingle with sweeter notes. The aromas of candy apples and ripe citrus fruits bring a sweet and fresh side, balancing the powerful roasting notes.
Palate
On the palate, the attack is frank. It gives way to aromas of plum and hibiscus, finding the citrus fruits of the nose. Dom Ruinart Rosé 2007 withdraws with a finish of exquisite freshness supporting a sapid profile. A great gastronomic champagne still promised to a beautiful evolution in the cellar.
Service
For optimal tasting, serve between 11 to 13°C in large tasting glasses.
Food and wine pairings
This Dom Ruinart Rosé 2007 pairs with fish (salmon tataki, marinated tuna), meats (Bresse poultry, veal). Over time, this exceptional champagne will be the ideal partner for pairings with spicier and more intense ingredients.

The property
First Champagne House founded in 1729, Ruinart is an essential reference. The historic Ruinart Champagne House owes its birth to the visionary and pioneering monk Dom Thierry Ruinart. Located in the heart of Reims, the Ruinart House guards a treasure. Unique, historical monuments and architectural feats, the Ruinart chalk pits have been classified as a historical site since 1931 and have been listed on the UNESCO World Heritage List since July 2015. Nearly 40 meters underground, in the darkness and coolness of the cathedral-like cellars, the precious bottles wait before coming into the light. Elegance, style and timelessness define the DNA of the Ruinart Champagne House, one of the most appreciated brands in France, embodying the excellence of a French lifestyle around the world.
The vineyard
The Dom Ruinart Rosé 2007 Champagne is made from grapes from great terroirs of Champagne, namely the Côte de Blancs (Avize, Le Mesnil-sur-Oger, Oger, Chouilly) and the Montagne de Reims (Sillery, Verzenay).
The wine
Created in 1959, the Dom Ruinart champagne is produced exclusively in great vintages. Made only from grand cru grapes, these champagnes crown the best harvests. Only after a long blossoming of about ten years in the Ruinart House's chalk pits will these prestigious cases be able to reveal all their aromatic complexity.
An innovative case
After more than two years of research and development, Ruinart unveils its new case: Ruinart Second Skin. An ecological alternative to boxes, Ruinart Second Skin is a 100% paper envelope, fully recyclable and molded to the shape of the bottle. This Second Skin, whose color and texture are inspired by the historic chalk pits of the House, highlights the roundness of the bottle's curves. In a desire to continue strong commitments to the environmental challenges of tomorrow, the Ruinart Champagne House thus succeeds in combining aesthetics, authenticity and responsibility.
The vintage
The 2007 vintage is a great year in Champagne. This complex year gave birth to high-quality chardonnays thanks to a mild winter that favored early flowering from the second half of May. The sun and heat of the summer allowed the berries to reach perfect maturity in order to start the harvest from the end of August to the beginning of September.
Blend
Chardonnay (80%)
Pinot noir (20%) vinified in red, coming from the unique Grand Cru of Aÿ.
