Description

A rich and refined champagne by Devaux, resulting from a very precise plot-based vinification

The producer

Founded by two brothers, Jules and Auguste Devaux, the Devaux Champagne House remained a family-owned estate from 1846 to 1987, the year in which this priceless heritage was passed on to the Union Auboise, which has now become the "Groupe Vinicole Champagne Devaux".

The vineyard

Thanks to a close partnership with more than 100 winegrowers, the Devaux Champagne House has developed over the years a unique approach in Champagne by implementing a sustainable viticultural approach throughout its vineyards. Made from exceptional vineyards, Devaux champagnes enhance two of the Champagne region’s flagship grape varieties, the Pinot Noir variety from the Côte des Bar, round and powerful, and the Chardonnay varietal from the Côte des Blancs and Montgueux, fine, elegant and fresh.

The individual cuvées, comprised within the D collection, are recognised for their purity and their authentic expression of the house's know-how.

The wine

Cuvée D by the Devaux Champagne House is made from a rigorous selection of plots of land which are then vinified separately.

Vinification and ageing

This champagne underwent alcoholic fermentation, mostly in temperature-controlled stainless steel vats, and a minority of the production was vinified in wood. Malolactic fermentation of the blend is partially carried out. The tirage and the prise de mousse, which last 6 to 8 weeks, precede at least 5 years of ageing in the cellar. After disgorging, this champagne benefits from an additional ageing period of 6 months to 1 year. The dosage for this cuvée is approximately 8 g/l.

The blend

Cuvée D by the Devaux Champagne House is the result of a blend of Pinot Noir (55%) from the Côte des Bar and Chardonnay (45%) from the Côte des Blancs, Montgueux and the Côte des Bar. The blend is mainly made with the heart of the cuvée, i.e. the finest part of the cuvée. This blend is completed by at least 35% reserve wines, mostly aged in casks.

The tasting

Colour

This wine showcases a beautiful golden colour. The effervescence is fine and persistent.

Nose

The nose reveals fragrances of white flowers, spices and then delicious notes of toasted brioche and vanilla.

Palate

The palate is seduced by this champagne’s delicate alliance between the refined Chardonnay grapes and the round and generous Pinot Noir grapes. Crisp and creamy, the highly fresh palate blends tangerine and orange peel notes and leads to a lingering finish.

Food and wine pairing

Devaux's Cuvée D will complement truffles, sea bass, crispy spider crab, veal sweetbreads, Thai-style crispy fish fillet with wild rice and peas. Thanks to its rich aromas, this champagne will also pair with gourmet desserts (a chocolate-pear brownie with hazelnut chips, a Myango chocolate mousse or a chocolate and vanilla entremet).

Service

For an optimal tasting experience, serve at 8 to 10°C.
