A delicate and sweet Crème de Cuvée by Devaux
The producer
Founded by two brothers, Jules and Auguste Devaux, the Devaux Champagne House remained a family-owned estate from 1846 to 1987, the year in which this priceless heritage was passed on to the Union Auboise, which has now become the "Groupe Vinicole Champagne Devaux".
The vineyard
Thanks to a close partnership with more than 100 winegrowers, the Devaux Champagne House has developed over the years a unique approach in Champagne by implementing a sustainable viticultural approach throughout its vineyards. Made from exceptional vineyards, Devaux champagnes enhance two of the Champagne region’s flagship grape varieties, the Pinot Noir variety from the Côte des Bar, round and powerful, and the Chardonnay varietal from the Côte des Blancs and Montgueux, fine, elegant and fresh.
The individual cuvées, comprised within the D collection, are recognised for their purity and their authentic expression of the house's know-how.
The wine
Devaux's Crème de Cuvée Demi-Sec champagne comprises Pinot Noir grapes grown in the Côte des Bar and Chardonnay grapes from the Côte des Bar and Côte des Blancs.
Vinification and ageing
This champagne underwent alcoholic fermentation in temperature-controlled stainless steel vats as well as malolactic fermentation. The tirage and the prise de mousse, which last 6 to 8 weeks, precede 3 years of ageing in the cellars. After disgorging, this champagne is aged for a further 3 months. The dosage for this cuvée is approximately 35 g/l.
The blend
Crème de Cuvée Demi-Sec by Devaux comprises a blend of Pinot Noir (70%) and Chardonnay (30%). The blend is mainly made with the heart of the cuvée, i.e. the finest part of the cuvée. This blend is completed by 20 to 25% of reserve wines, some of which are aged in casks.
The tasting
Colour
The colour is a beautiful golden yellow.
Nose
The nose combines light vanilla fragrances with savoury notes of exotic fruits.
Palate
Lively and aerial, the attack gives way to a mouth marked by aromas of caramel and fresh fig. The finish is seductive with its sweetness and persistence.
Food and wine pairing
Crème de Cuvée Demi-Sec by Devaux will complement oysters served in an olive marinade, chicken with honey or a fruit salad.

For an optimal tasting experience, serve at 8 to 10°C.
