The richness and defined personality of a Bollinger champagne

The estate

Nicknamed "Boll" in Champagne and "Bolly" by the English, the timeless and legendary Bollinger Champagne House belongs to the small circle of the very great Champagne estates. The style of Bollinger champagne is defined by the exemplary precision brought to each stage of production. Respect for tradition, hand riddling of bottles, corking of reserve magnums, the last cooper in the region, this zeal for excellence has symbolised the entire culture of Bollinger Champagne since its creation in 1829 in Aÿ. More than an art, it is a heritage.

The vineyard

Bollinger's uniqueness comes from its 174 hectares divided into seven main vineyards in Champagne, 85% of which are Grand and Premier Crus, making the house one of the few to produce its own grapes for its blends. Pinot Noir, the house's signature grape variety, accounts for 60% of the vineyard's vines.

The wine

La Côte aux Enfants Blanc de Noirs is an Aÿ Grand Cru that stems from a unique eponymous plot. This 4-hectare plot was created (through successive acquisitions between 1926 and 1934) by Jacques Bollinger. Bollinger pays tribute to his visionary spirit by unveiling this first single plot cuvée.

Winemaking and ageing

This Brut champagne benefited from ageing in the cellar, under cork, for more than twice as long as the rules of the appellation dictate. Its dosage is 8 grams per litre.

Tasting

Colour
The colour is of a subtle golden hue.

Nose
The nose is generous, releasing grilled, roasted and toasted scents mingled with notes of dried flowers and hazelnuts. The combination is followed by notes of honey and spice.

Palate
Firm and rich, the palate has fruity scents with honey, mingled with spice notes.

For the best tasting, serve between 8 and 10°C.
