The producer
Since its creation in 1818 by the spouses Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained independent, preserving all of its know-how and the high quality of its vintages for 7 generations.
The vineyard
The Billecart-Salmon vineyard stretches from the Côte des Blancs to the Montagne de Reims and covers almost 100 hectares. The vines are cultivated and cared for in the traditional manner in order to get as close to the authentic fruit as possible and to reflect the quality of the Champagne region’s terroir.
The wine
Made from the finest Premiers and Grands Crus of the Montagne de Reims and the Côte des Blancs, the Brut sous Bois cuvée of the Billecart-Salmon Champagne House is a total mastery of the art of blending, combining ancestral know-how and the spirit of the original champagnes. Unique, it is entirely vinified in wood.
The vinification and ageing
Reserve wines compose 30 to 35% of this champagne. Aged on lees for 6 to 7 years. Dosage of 7 g/l.
The blend
The Brut sous Bois cuvée by the Billecart-Salmon House is composed respectfully of the three of Champagne’s famous grape varieties, Chardonnay, Pinot Noir and Pinot Meunier.
The tasting
Colour
Crystal clear, the golden yellow colour is adorned with brilliant reflections. The effervescence is delicate and persistent.
Nose
Billecart-Salmon’s Brut sous Bois harmoniously blends fragrances of dried fruit, fresh citrus fruit and white fruit with fine buttery notes. An aromatic finesse which expresses all the complexity of a mature champagne due to its vinification in oak barrels.
Palate
On the palate, this champagne reveals a refreshing texture that is enhanced by a creamy sensation combined with a nice vivacity. It is a burst of flavours on the palate with toasted notes of bread rolls and toffee, conducive to the racy development of the cultural identity of the greatest champagnes.
