The Zyme estate takes its name from the Greek word for yeast. Indispensable in the world of oenology, the word yeast also carries a symbolic meaning when it is linked to the natural process of fermentation, the common thread in the metamorphosis of grapes into wine. To represent this philosophy, the estate has chosen a logo depicting a vine leaf in the centre of a pentagon, symbolising the five elements: Man, Life, Water, Earth and Sun.
Located in the heart of the Valpolicella region, near Verona in the Veneto region of Italy, the Zyme estate extends over 30 hectares of vineyards, cultivated in accordance with the highest standards of sustainable agriculture, in an environmentally-friendly model. Zyme is also an architectural feat by Moreno Zurlo, a harmonious encounter between the beauty of nature and the work of mankind.
A true visionary, Celestino Gaspari, owner and oenologist of the Zyme estate, has developed a philosophy, ethics and culture based on the values of sustainability and excellence that give his Amarone della Valpolicella Classico its greatness. Renowned throughout Italy for the precision of his wines, Celestino Gaspari succeeds in creating transparent wines that reflect the identity of their land of origin.
