Description
A complex and balanced Pessac-Léognan red Second Wine
The estate
Owned by the Bernard family since 1983, the beautiful Domaine de Chevalier is poised at the top of the greatest Bordeaux Classified Growths. The estate is located in the heart of the Pessac-Léognan appellation and is surrounded by a lucious, green haven to the south of Bordeaux. L'Esprit de Chevalier is the second wine of the estate.
The vineyard
Domaine de Chevalier produces Pessac-Léognan wines made from a rare 67-hectare vineyard that rest on a gravelly soil with clay and gravel subsoil. Since 1986, the young vines have been used to ripen the grapes that go into the second wine of the estate, L'Esprit de Chevalier.
Vinification and ageing
Following manual harvesting in crates, during which a meticulous sorting is carried out in the vineyard, the grapes are again sorted in the cellar before and after destemming. The grapes are vinified in four vats (steel, steel-aluminium, concrete truncated cone and wooden vats). The wine is then aged in Grand Vin barrels, a third of which are new, for 14 months with stirring on the lees for the first 4 months.
The blend
Cabernet Sauvignon (65%)
Merlot (25%)
Petit Verdot (10%).
