The producer
The Cossy family has been producing grapes for other Champagne houses since 1764, and in the 1950s, they decided to sell the champagne from their vineyards under their own name.
Family-owned, the Cossy Champagne House is headed by Sophie Cossy, who took over the running of the estate at the age of 26, following her father’s passing.
Sophie Cossy is passionate about producing sophisticated champagnes which offer new tasting experiences.
The vineyard
The Cossy Champagne House watches over a sustainable 7-hectare vineyard, spread over 34 different plots located to the south of Reims.
The wine
Cossy's L'Éphémère Brut is made exclusively from classified Premiers Crus vineyards. This champagne is produced based on the 2011 harvest, supplemented by reserve wines from 2009 and 2010. The dosage is 6 g/litre.
The blend
L'Éphémère Brut by Cossy comprises a blend of Pinot Meunier (50%), Pinot Noir (30%) and Chardonnay (20%).
The tasting
Colour
A beautiful golden colour with a fine and delicate effervescence.
Nose
This champagne opens with a rich aromatic palette (pear, almond, dried flowers, baguette). Following aeration, delicious notes of pastry, wood and dried fruit are revealed.
Palate
A lively attack precedes a fresh and gourmet mouth. Full and fleshy, the palate is sustained by a beautiful acidity and a tender texture.
Food and wine pairing
The Éphémère Brut by Cossy is ideal with morels in cream sauce, andouillette with mushrooms, calf sweetbreads or cheeses (Corsican sheep milk cheese, Vercors-Sassenage blue cheese).
