The producer
The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. For generations, the members of the Ayala family have been committed to producing greatly elegant champagnes that are appreciated beyond borders, notably across the Channel, where Ayala has been the official supplier for the British Crown. In 2005, the Ayala Champagne House was taken over by the family company Bollinger.
The wine
An ephemeral cuvée, N°14 Rosé by Ayala comprises grapes from five emblematic Grands Crus of the Champagne region, namely Aÿ, Chouilly, Cramant, Le Mesnil-sur-Oger and Vezy. Each of these five terroirs expresses the unique know-how of the Ayala House regarding the blending process.
Winemaking and ageing
This cuvée has been aged in the cellar for 6 years on its lees. The dosage is 5.3 g/litre.

Tasting
Colour
The bright colour reveals a beautiful golden hue. The effervescence is very fine.
Nose
The fresh and expressive nose blends fruity fragrances (Morello cherries, redcurrants, cherries) with exotic notes of mango, lychee and passion fruit.
Palate
A lively and full attack precedes a smooth and refreshing palate. Vanilla and lemon notes harmoniously blend with chalky, cocoa and blood orange aromas. A smooth minerality stretches to a persistent finish, exuding notes of ginger and grapefruit.
Food and wine pairing
A carpaccio of sea bass with mango and pink berries, a lamb shoulder with sweet spices, a beef tartar or sweet dishes such as a pavlova will complement this exceptional champagne.
