The estate
"Giving to time, time": this quote from Miguel de Cervantes could not better illustrate the philosophy of the famous Caves du Paradis estate. According to the Roten family, owners of this illustrious 10-hectare estate, it is essential to listen to the rhythm of the earth in order to offer wines with a formidable symphony of flavours. A symphony that is continued to this day by Olivier Roten, who is brilliantly making the most out of the heritage bequeathed by his grandfather.
The vineyard
Faithful to the mountainous landscapes of Switzerland, the vineyards of the Valais are characterised by their steep terraces, with impressive and vertiginous slopes. The diversity of this remarkable environment and the climate that makes it up promise grapes of remarkable ripeness. This is without counting on the influence of the Foehn, a warm wind from the Alps which plays a preponderant role in the development of the grapes in the Valais vineyards.
Culminating at an altitude of up to 800 metres, this wine is produced from vines that are around forty years old, anchored on the hillsides of Sierre and Salquenen.
Winemaking and ageing
After the harvests are done by hand, the grapes are pressed as whole bunches. The wine is then fermented in temperature-controlled concrete vats. A partial malolactic fermentation is then carried out before the wine is aged for a year in concrete vats.

Finesse is the key word for this intensely fresh cuvée. Its sublime aromatic palette reveals lemony touches, mixed with a lovely minerality and hints of hazelnut on the finish.
