The estate
Founded in 1731 in Beaune, Bouchard Père & Fils is one of the oldest wine houses in Burgundy. For nearly three centuries, 9 generations have succeeded one another with the ambition of creating an exceptional estate in Burgundy.
Gradually built up over the years, the vineyards of the Bouchard Père et Fils estate now cover 130 hectares of vines. Combining prestigious appellations with exceptional plots, the Bouchard Père & Fils vineyard is the embodiment of a unique wine heritage in Burgundy.
The vineyard
The 2019 Bouchard Père & Fils Cuvée "Les Cailles" is a Nuits-Saint-Georges 1er cru wine that stems from a 1.08-hectare vineyard located in the southern part of the eponymous commune. Remarkable for the elegance of its wines, this east/south-east facing terroir rests on limestone soil.
Vinification and ageing
The grapes are harvested manually and sorted before being partially or totally destemmed, depending on the vintage. Alcoholic fermentation is carried out in small containers with a gentle pressing. Depending on the vintage, the vatting time varies from 12 to 15 days. The wine is aged for 10 to 18 months in French oak barrels (60 to 85% of which are new) in the Bastions cellars of the old Château de Beaune.
