The estate
Founded in 1731 in Beaune, Bouchard Père & Fils is one of the oldest wine houses in Burgundy. For nearly three centuries, 9 generations have taken over, one after the other, with the same ambition: to create an exceptional estate in Burgundy.
Gradually built up over the years, the vineyards of the Bouchard Père et Fils estate now cover 130 hectares of vines. Combining prestigious appellations with exceptional plots, the Bouchard Père & Fils vineyard constitutes a unique wine heritage in Burgundy.
The vineyard
"Les Cailles" Domaine 2021 from Bouchard Père & Fils is a Nuits-Saint-Georges Premier Cru wine that stems from a vineyard of 1.08 hectares, located in the south part of the eponymous village. This east/south-east-facing terroir, resting on a limestone soil, is remarkable for the elegance of its wines.
Winemaking and ageing
The grapes are harvested by hand and sorted before being partially or totally destemmed, depending on the vintage. Alcoholic fermentation takes place in small containers with a gentle pressing. Depending on the vintage, the vatting period varies from 12 to 15 days. The wine is aged for 10 to 18 months in French oak barrels (60 to 85% of which are new) in the Bastions cellars of the old Château de Beaune.
