Description

A complex and sophisticated South Australian Cabernet Sauvignon

The estate

The prestigious magazine, Wine Enthusiast, honoured Penfolds as their 2013 New World Winery of the Year, the Penfolds estate had already established itself as an icon of fine Australian wines at the beginning of the 20th century, thanks to Mary Penfold’s unparalleled determination. Indeed, the co-founder of the Penfolds estate put her heart and soul into making exceptional wines. Her lifelong work is reflected in the winery's success in establishing itself as a benchmark in Southern Australia. When Max Schubert became part of the Penfolds' story in the 1950s, he instilled the elegance of fine Bordeaux wines, that fascinated him greatly, into the estate's wines. Success shortly followed when the cellar master produced his famous Grange wines, which crossed Australian borders in order to win the hearts of wine lovers from all around the world. Today, the talented Peter Gago has taken over this role.

The vineyard

Penfolds' 2019 Bin 707 Cabernet Sauvignon comes from several regions in South Australia: McLaren Vale, Coonawarra, Barossa Valley and Padthaway. This diversity enriches the wines and provides an insight into a wide range of Australia’s finest wine regions.

The vinification and ageing

Following the harvest and the fermentation process, the wine is aged for 18 months in American oak demi-muids (100% new).

The 2019 Bin 707 Cabernet Sauvignon has an intense red colour.

Nose

This wine blends fragrances of rolled cigar leaves with delicious iodine notes. After airing, persistent notes of roasted meats and sweet spices emerge.

Palate

A refreshing attack gives way to a palate with aromas of stewed fruit, chocolate and cigar, combined with tannins that will reveal their finesse and expressiveness over the years.

Storage

This 2019 Bin 707 Cabernet Sauvignon by Penfolds can be kept until 2050, enabling this wine to express all the nuances of its aromatic palette.
