The estate
Voted New World Winery of the Year in 2013 by the prestigious Wine Enthusiast magazine, Penfolds had already established itself as an icon of Australia's great wines thanks to the unparalleled determination of Mary Penfold in the 19th century. Certainly the co-founder of Penfolds devoted herself body and soul to making exceptional wines. Her life's work is reflected in the winery's success in establishing itself as a benchmark in Southern Australia. When Max Schubert joined the Penfolds venture in the 1950s, he brought to the estate's wines the elegance of the great Bordeaux wines that so fascinated him. Success was not long in coming when the cellar master signed his famous Grange cuvée, which crossed Australian borders to win the hearts of wine lovers around the world.
The wine
This wine was launched in 1993 with the 1990 vintage. Produced in the same way as Bin 707, Bin 407 reflects the finest Cabernet sauvignon, highlighting the characteristics of the variety. Powerful structure, intense aromatic expression of the fruit and a refined barrel ageing process determine the profile of these multi-sourced wines. The grapes are sourced from the McLaren Vale, Barossa Valley, Coonawarra, Padthaway, Wrattonbully regions.
The vintage
The winter and spring were very dry which delayed flowering and fruit set. Irrigation was unavoidable as Clare Valley experienced its driest winter in 120 years. Clare Valley, Coonawarra, Wrattonbully, Padthaway and Barossa Valley suffered frosts in September which impacted on yields. The 2019 calendar year was the driest on record in the Barossa Valley. Fortunately, McLaren Vale had above average rainfall in February. The Cabernet Sauvignons were of perfect quality despite very low yields.
Ageing
This wine was aged for 15 months in 300-litre French oak barrels, of which 24% is new wood, and American oak with 12% new wood.

Tasting
Colour
This wine is of a ruby colour.
Nose
The typical scents of Cabernet sauvignon are elegantly expressed, with blackcurrant, blackberry and a mint leaf freshness. Animal notes combined with oriental spices. The oak barrels bring hints of coconut, cocoa and cedar.
Palate
This Australian wine is fleshy and generous. Scents of cherry, cola and sage with leather come through. Good acidity and soft, integrated tannins make this wine well balanced. The long finish is a sign of a high quality wine.
Food and wine pairing
Spicy meats go marvellously with this wine.
To serve
For the best tasting, serve between 16 and 18°C.
Storage
This Bin 407 Cabernet Sauvignon 2020 from Penfolds can be tasted in its youth, and will develop all its complexity by 2040.
