A refined, powerful and alluring Chablis wine
The estate
Truly in tune with the times, the Jean-Marc Brocard estate is one of the most important and influential producers of organic wines in the Burgundy region today. This is why he has always endeavoured to implement sustainable principles, by restricting human intervention in order to best reveal the authenticity of the Chablis climates. These skilful practices result in frank, firm, pure and mineral wines.
The vineyard
The Jean-Marc Brocard estate covers 200 hectares in the heart of Chablis, of which 40 hectares are cultivated in a biodynamic manner and 66 using organic practices. "Vaudésir" 2019 is a Chablis wine made from 30-year-old Chardonnay vines that are rooted in Kimmeridgian soil and enjoy a southern exposure. The work carried out on the vineyard respects the fundamental principles of sustainable agriculture.
The vinification and ageing
Following the harvest, the grapes are pressed by pneumatic pressing, followed by static settling. Alcoholic fermentation is carried out using wild yeasts in temperature-controlled tanks at 20 degrees. Lastly, the wine is aged on its lees in barrels for 14 months.
