A rich and fine Fixin wine by René Bouvier
The estate
Located in Gevrey-Chambertin, the origins of this Burgundian estate hark back to the 1950s, when René Bouvier took over the running of the estate that was created by his father in 1910 in Marsannay. Since 1992, Bernard Bouvier has been at the helm of this family estate. The 30 hectares of vines are managed with a deep respect for the environment. This terroir includes 23 hectares dedicated to the production of red wines and 7 hectares to white wines.
The vineyard
Domaine René Bouvier's 2019 Crais de Chêne Sans Soufre is a Fixin Village wine made from a 1.7-hectare plot of vines located in the eponymous area between the villages of Couchey and Fixin. The vines are 55 years old on average and thrive on clay-limestone soils at an altitude of between 282 and 295 metres.
Vinification and ageing
The hand-picked grapes are rigorously sorted on a table before being placed in thermo-regulated gravity-fed vats. Depending on the vintage, 50% of the grapes are harvested whole. Fermentation with indigenous yeasts. Low intervention vinification with an emphasis on infusion. Initial ageing for approximately 12 months in barrels (20% of which are new) followed by a further 6 months in vats. The bottling date is determined based on the lunar calendar.

The tasting
This lively and powerful red Burgundy wine reveals a full structure along with a beautiful minerality. As it ages, it develops more complex notes of fresh fruit and flowers.

This Fixin wine can be kept in the cellar until around 2034 to reveal all its aromatic richness.
