The estate
The Castellare di Castellina estate is among the most iconic in Chianti. Anchored in a centuries-old viticultural tradition, it honors the Sangioveto, the local name for the famous Sangiovese, the flagship grape of Tuscany. Going against fleeting trends, the estate proudly claims its Tuscan identity by valuing this native grape, a symbol of its attachment to the terroir.
The vineyard
The vines that give birth to the I Sodi di S. Niccolò are planted on the best terroirs of the estate in Tuscany. The plots benefit from an ideal exposure and soils particularly suited to the optimal expression of the sangioveto and the malvasia nera. Environmentally friendly cultivation promotes rich biodiversity, contributing to the exceptional quality of the harvested grapes.
The vintage
The 2021 vintage in Tuscany initially raised concerns due to a prolonged absence of precipitation. However, a drastic drop in nighttime temperatures around September 10 significantly improved conditions. These circumstances ultimately allowed excellent maturation of the grapes, particularly for the sangiovese, offering an exceptional quality of harvest.
Vinification and aging
The grapes of the I Sodi di S. Niccolò 2021 were manually harvested during the first week of October and placed in small crates to avoid crushing. After careful sorting and destemming on the selection table, alcoholic fermentation took place in stainless steel tanks at 25°C for 7 days, followed by a 20-day maceration on skins. After malolactic fermentation, the wine was aged in barrels (50% new) for about 30 months, then rested in concrete tanks before being bottled where it aged an additional 8 months before its release.
