The estate
Founded in 1731 in Beaune, Bouchard Père & Fils is one of the oldest wine estates in Burgundy. For nearly 3 centuries, 9 generations have succeeded one another, driven by the ambition of creating an exceptional estate in Burgundy.
Gradually built up over the years, the vineyard at the Bouchard Père & Fils estate today stretches across 130 hectares of vines. Bringing together prestigious appellations and exceptional plots, the Bouchard Père & Fils vineyard constitutes a unique winegrowing heritage in Burgundy.
The vineyard
It was in 1220 that Clos de la Mousse was bequeathed to the Chapter of Notre-Dame by the Canon Edme de Saudon. Broken up during the French Revolution, the Clos de la Mousse vineyard was gradually acquired by the Bouchard family following various acquisitions. A monopoly vintage of the Bouchard Père & Fils house since 1872 and still enclosed by its original wall, the Premier Cru "Clos de La Mousse" Domaine Monopole 2018 from Bouchard Père & Fils is a Beaune wine produced from a 3.36-hectare terroir.
Winemaking and ageing
Once manual harvests have been carried out and the grapes sorted, the grapes are subject to either partial or total destemming, depending on the vintage. Alcoholic fermentation takes place in small containers, with gentle pressing. The ageing of the Beaune Premier Cru Clos de la Mousse by Bouchard Père & Fils takes place in French oak barrels (of which 30 to 40% are new) for 12 to 14 months within the Bastion cellars of the former Château de Beaune.
