Tasting
Nose
The aromatic bouquet reveals great complexity with buttery notes, cooked apple and citrus. Exotic fruit aromas such as pineapple delicately mingle with floral nuances of linden. A spicy dimension of cinnamon and mineral of flint completes this olfactory palette, enriched by vegetal touches of fern and juniper.
Palate
The palate seduces with its remarkable concentration, its distinction and perfect balance. The harmonious structure supports an intense and complex finish that lingers long, revealing all the nobility of this grand cru.
Food and wine pairings
This great white wine pairs perfectly with noble crustaceans such as lobster, langoustine or crab. It also elegantly accompanies fine fish, certain white meats and poultry in creamy sauce.
Service and aging
Serve between 12 and 14°C. With excellent aging potential, it can be kept until around 2029, or even beyond for lovers of mature wines.

Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot house moved to Beaune in 1912. The vineyard
The Grand Cru Domaine du Pavillon is a Corton-Charlemagne wine from the Languettes climate, located on the south/southeast slope of the Corton hill. This 1.2 hectare plot, formerly owned by the Ladies of the Abbey of Lieu-Dieu and nicknamed "Vigne Dieu", benefits from an exceptional terroir composed of brown limestone on argovian marl. The vines, averaging 35 years old, thrive on this terroir renowned for producing powerful white wines with remarkable finesse, delicacy and purity.
Vinification and aging
Manual harvest. Fermentation in oak barrels, 60% of which are new, for a period ranging from three weeks to two months. Aging from 12 to 15 months, in oak barrels of which 30% are new.
