A rich and expressive Pouilly-Fumé white wine by Pascal Jolivet
The estate
In 1987, Pascal Jolivet, a former sales agent at the Pommery Champagne House, founded his own estate in Sancerre.
Since the production of his first vintage in 1991, Pascal Jolivet has progressively expanded his estate which now comprises 95 hectares of vines that spread across Pouilly-Fumé, Touraine, Sancerre and Pouilly-sur-Loire.
The vineyard
Pascal Jolivet's Les Terres Blanches 2020 is a Pouilly-Fumé wine that stems from a 6.5-hectare vineyard. Located in the hamlet of Bouchat, to the north-east of the village of Pouilly-sur-Loire, this historic terroir is composed of white clay and limestone soils, which resonates with the name of this wine.
Vinification and ageing
Following the harvest, the grapes are sorted by hand. Fermentation with wild yeasts in temperature-controlled tanks.
