Description
A fresh and complex white wine from Sancerre
The estate
In 1987, Pascal Jolivet, a former sales agent within the Pommery Champagne House, founded his own estate in Sancerre. Since the production of his first vintage in 1991, Pascal Jolivet has gradually expanded his estate. He now reigns over 95 hectares of vines that spread between Pouilly-Fumé, Touraine, Sancerre and Pouilly-sur-Loire.
The vineyard
Pascal Jolivet's Grand Chemarin 2017 is a Sancerre wine that stems from a 1.39-hectare vineyard in the village of Bué. This plot selection, composed exclusively of old vines aged around 40 years old on average, rests on a limestone soil.
Vinification and ageing
Harvested by hand, the grapes are rigorously sorted before being vatted by gravity flow. Light pressing. Only the free-run juice and the juice from the press are kept. Natural vinification in temperature-controlled stainless steel vats, then aged on fine lees for 12 months.
