Mathilde, Michel Chapoutier's daughter, has taken over the torch of this iconic house, overseeing a vineyard of more than 350 hectares across the most prestigious appellations of the Rhône Valley but also in Roussillon, in Australia, in Portugal.
The vineyard
The Bila-Haut Chrysopée cuvée by M. Chapoutier is a wine from Collioure made from vines planted on very old primary schist soils. The vineyard is located in Latour de France.
Vinification and aging
The grapes undergo a first rigorous sorting before whole bunch pressing. This wine from Roussillon benefits from a slight settling at 12°C for 24 hours. Cuvaison in demi-muids lasts six months with lees stirring for the first two months.
