The refinement and balance of a great Sauternes wine
The property
Located in Barsac, in the Sauternes appellation, the Château Doisy-Daëne has belonged to the Dubourdieu family since 1924. Carried by three generations of winemakers, this Second Cru Classé in 1855 with an exceptional terroir produces sweet wines recognised among the greatest wines of Bordeaux. Since 2000, Denis Dubourdieu has been at the head of the property.
The vineyard
Château Doisy-Daëne is located on the terroir of the Barsac plateau in Sauternes. This area is characterised by its unique geological formation. It features a thin layer of clayey sands known as "the red sands of Barsac" which rest on limestone subsoils. This porous limestone thus allows to regulate the water supply of the vine by returning the water stored during the winter. The wines of Château Doisy-Daëne are therefore distinguished by their exceptional finesse.
The wine
L'Extravagant de Doisy-Daëne was born in 1990. This rare and exceptional cuvée was born from an experiment carried out by Denis Dubourdieu. He wanted to experiment with the creation of a cuvée from a Sauvignon Blanc affected by noble rot and pushed to the extreme. The grapes were thus harvested in early November with a high sugar content, a high alcohol potential and very concentrated berries. Since 1990, only very great vintages have been produced and in confidential quantities, from the historic plots of the property.
Vinification and ageing
The production of the sweet wines of Château Doisy-Daëne requires a haute couture vinification designed to combine oenological progress with tradition. Thus, in order to harvest at the most opportune time the grapes that have developed the famous "noble rot", the harvest is carried out grain by grain with the greatest rigour by experienced harvesters. Pressing lasts 8 to 10 hours. Fermentation in French oak barrels (100% new).
