Description
Fresh and elegant, a fine red wine from Saint-Émilion
The estate
The Couvent des Jacobins estate is set in a staggeringly beautiful setting, tucked away in the heart of Saint-Émilion. A true reminder of the history of this small medieval town, the Jacobins Convent was built in the 13th century. The estate has been renowned for the production of its wines for nearly seven centuries. Since 2010, Xavier Jean has been at the helm of the estate and perpetuates the history of this emblematic property of the appellation.
The vineyard
Le Couvent des Jacobins is a Saint-Emilion wine made from a 10.7-hectare vineyard. This terroir is spread over 4 different types of soil: limestone rock to the east, sandy-clay on calcareous Fronsadais molasses (south-west), sandy-clay on an iron ore subsoil (south-west) and calcareous-clay (on the north-east plateau of the village).
Vinification and ageing
Vinification by plot. Pre-fermentation maceration of 3 to 5 days. Total maceration of 25 to 30 days. Aged for 12 months in barrels, 45% of which are new and 55% one-year-old.
The blend
Merlot (85%)
Cabernet Franc (15%).
