Description
The aromatic richness and balance of a Saint-Émilion wine
The estate
It was in 2014 that Sylvie Cazes and her children acquired Château Chauvin. Continuing the work done by the Ondet family, the Cazes family has put all its energy and winegrowing experience into the service of this Saint-Émilion Grand Cru Classé. Since the 2014 vintage, Château Chavin has been sporting a new label, inspired by its 1929 one which caught the eye of Sylvie Cazes. Cupid, the Roman god of love, is represented by a banner on which is represented the emblematic Saint-Émilion lion. This label thus pays tribute to the symbolism of the terminology of Château Chauvin, meaning "to be in love with one's land".
The vineyard
Château Chauvin 2022 is a Saint-Émilion wine from a 17.5-hectare vineyard located in the north-west of the commune. The property enjoys an exceptional location between Château Cheval Blanc and the Butte de Roi. The vines are 28 years old on average and are planted on sandy-clay soils with a significant presence of iron residue on clay subsoils. The vineyard of Château Chauvin is certified HVE (High Environmental Value).
The vineyard
The winter was mild, with average rainfall. The frost recorded at the beginning of April spared the vines thanks to the rigorous work of the teams. At the end of May, flowering was early, rapid and uniform. The summer was hot, resulting in a water deficit which, due to the clay soils, allowed the vines to produce rich grapes with a very good ripeness.
Winemaking and ageing
The grapes were harvested by hand in small crates and meticulously sorted in the vineyard and twice in the cellar. Cold maceration for 2 to 5 days at a temperature of 8 degrees. Alcoholic fermentation then took place in temperature-controlled stainless steel vats and malolactic fermentation in barrels. Vatting took place over a period of 20 to 30 days with a gentle and slow extraction. Finally, the wine was aged in 60% new French oak barrels for 15 to 18 months.

Château Chauvin 2022 stems from Merlot (78%), Cabernet Franc (18%) and Cabernet Sauvignon (4%).
