Description
An aromatic and structured Grand Cru from Saint-Émilion
The property
Château Bellevue Mondotte is a Grand Cru of the Saint-Émilion appellation, whose 2 hectare vineyard is partly enclosed within Château Pavie Decesse. Located on the clay-limestone plateau of Saint-Émilion, at an altitude of 80 metres above the Dordogne valley, this terroir, whose vines are 51 years old on average, enjoys an ideal southern exposure, sloping soils favouring excellent natural drainage and a vineyard that is not subject to frost due to its geographical location.
Vinification and ageing
Harvested manually, the grapes undergo rigorous sorting before being vinified. Alcoholic fermentation takes place in thermoregulated wooden vats. Malolactic fermentation is carried out in barrels, as is ageing (90% new barrels and 10% wine barrels) with a final blend just before bottling.
