Description

The elegance and aromatic finesse of a Saint-Émilion Grand Cru

The estate

The origins of this property date back many years. The vines were cultivated on the slopes of what is now Château Pavie as early as the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, 1er Grand Cru Classé "A", has one of the most beautiful terroirs of Saint-Émilion. Château Pavie is recognised for the structure and elegance of its wines.

In 2005, Arômes de Pavie became the label of the second wine of Château Pavie, coming from the vineyards of Château Tour Simard.

The vineyard

Arômes de Pavie is produced from vines that are mostly less than 10 years old and come from lots that do not fit into the estate's First Wine. Located to the south-east of the Saint-Émilion hill, the 29-hectare vineyard is planted on a "plateau" made up of clay-limestone soils over asteriated limestone. Particular attention is paid in the vineyard with green harvests, leaf stripping and pruning adjusted to the age of each vine.

Vinification and ageing

Stricktly adapted to the harvest, vinification is carried out in thermoregulated oak vats. The vatting lasts 31 days. Malolactic fermentation and ageing take place in barrels. The breakdown is 70% new oak barrels and 30% second-fill barrels.

The blend

The Arômes de Pavie 2020 is a blend of Merlot (50%) and Cabernet Franc (50%).
